Cappadocia, Türkiye

Cappadocia sits in central Anatolia, about a 1-hour 15-minute flight from Istanbul. Ancient eruptions laid down soft tuff rock that wind and water sculpted into cones, ridges and "fairy chimneys"; people then carved homes, churches and whole underground cities into it.

The balloon flight is the signature experience — taking off before dawn and drifting over the valleys as hundreds of other balloons rise with you. Flights are weather-dependent and cancel often in winter and on windy days, so plan two possible mornings. Even from the ground, the sunrise viewpoints above Göreme are spectacular.

Göreme is the most convenient base, full of cave hotels. The Göreme Open-Air Museum is a monastic complex of rock-cut churches with Byzantine frescoes. Walkable and drivable valleys — Rose, Red, Love, Pigeon, Ihlara — offer easy hikes among the formations. The hilltop castles of Uçhisar and Ortahisar give wide views.

Go underground at Derinkuyu or Kaymaklı, multi-level cities where thousands once sheltered, complete with ventilation shafts, wells and stone doors. Other half-days: pottery workshops in Avanos on the river, the Pasabag and Devrent valleys, and a sunset with tea at a panorama point.

Food here is hearty Anatolian: testi kebabı (meat and vegetables slow-cooked in a sealed clay pot that is cracked open at the table), manti dumplings, gözleme, and local wine from vines that thrive in the volcanic soil. Halal food is standard.

April–June and September–October are ideal — mild days, better balloon-flying odds and green valleys. July–August is hot and busy. Winter can be magical with snow on the chimneys, but expect more balloon cancellations.

Many travellers fly into Kayseri or Nevşehir airports and transfer 45–75 minutes to Göreme. Once there, you can walk, join small-group valley tours (commonly sold as "Red" and "Green" tours), or hire a car for a day.
